Twisted Dinner

I find cooking very therapeutic. It helps me clear my mind and only think about cooking a yummy meal. Over the years I've learnt to downsize my portions for one. It's not easy so I tend to freeze my food for quick and easy access. Spaghetti is one my food that I portion and freeze. 1packet can serve me 6-7 portions. I usually make 2 sizes. Small portion(for when I'm not so hungry) and Bigger portion(for days that I could eat a cow). It's easy when you wanna cook and hate the waiting and cleaning up.

Today was one of the days that I felt like cooking. Visited the supermarket to get Ground Beef to do a mix up of this:

Not plated in the most presented manner but it was delish!!! Although the combi was a little weird but food is Yumm!! I like the fact that i satisfied my craving for spaghetti and ate some greens, not forgetting cooking a portion for tomorrow's lunch! *satisfied*

Ingredients: Garlic, red onions, spring onions(scallions), frozen cooked prawns, ground beef, pepperoni salami, red wine, Asian greens(salad), egg, avocados & truffle :))

It's quite a variety of ingredients but you can store them away and use it again. But basically they were ingredients I had to finish.
Method:
1. Heat olive oil with chopped onions & spring onions(scallions)
2. When onions have soften, add in the spaghetti, toss till the spaghetti is coated.
3. Push the spaghetti to the side, add the beef, when it is partially cook, mix it altogether.
4. Add pepperoni salami, prawns and some red wine.
5. Cover for 30seconds and you are done! Plate up and add your greens if you have.

Salad:
I fried an egg cause I was just craving for it. Used the the same frying pan since the pan is already coated with olive oil :) Mum came back and gave me some blueberries and avocados. There you go, my mix and match dinner.

Reasons why I love the Supermarket

Lunch crunch. Got sick of having the same old food her in orchard road. Been with my company for over three years and counting. So you can imagine how often I eat around my office. Note that lunch break is just an hour. That's means, going out, queuing for your food, having your quick bowl of laksa/chicken rice/nasi Padang/noodles etc.. And getting back to the office within that hour. Well, not forgetting smelling like smoke and oil after that.

Today was one of those days that I didn't feel like having the usual local food. And I was craving for something different but, I wasn't sure what it was either. So I paid the supermarket a visit.

Here's what I had for lunch:

It's some of the little things you find in the supermarket. This was from Paragon-Market Place. Not the cheapest comparing to supermarkets, but it's the most convenient & fresh! So I bought the Hussey&Co-Asian Greens that was on "Quick Sale" Love it that their quick sale food can actually last you for another 2 days and not those half rotten ones that really doesn't make any sense buying even if it's on sale. A packet of Pepperoni Salami, Mixed pasta that has black olives, dried tomatoes in olive oil (I'll use that as my dressing) , Frozen cooked Prawns(bought earlier in the week, all you got to do in put water and heat it up in the microwave to defrost)

Prepped it in less than 5 mins, it's really quick and easy. And tada!! Lunch is served. Remaining ingredients I'll just use it for dinner or for another day ^^

Have a good Healthy lunch! Wish I could have had a fruit juice to go with it. Would have been perfect!
